I incremented the disk size of all the couchdb instances. The culprit are the couchdb and upstart log files.
The couchdb log files run at debug level so it's expected that they are very verbose, while upstart is so stupid that tried to restart the service indefinitely while the disk was full, and it was logging each try, actively contributing to the space occupation.
